Who doesn't love twice baked potatoes? They're so good and this recipe is low in fat too!
If you don't have low fat cottage cheese on hand, you can substitute it for low fat sour cream.
And, if you want to go even lower on the fat content side, then substitute low fat cheddar cheese for the full fat version.
Ingredients: 4 potatoes, 1/2 cup low fat cottage cheese or sour cream, 2 tablespoons low fat milk, 2 tablespoons diced onion, 1/2 teaspoon salt, 1/2 teaspoon pepper, 1 cup shredded cheddar cheese, and 1/4 teaspoon of paprika.
Directions: Preheat oven to 400 degrees. Clean and prepare potatoes for baking. Prick potatoes with a fork and bake potatoes in heated oven until tender, about 40 minutes. Be sure to place tray under potatoes to catch any drippings.
Slice potatoes in half and scoop out potatoes into a bowl. Set potato halves aside. Combine potato mixture with cottage cheese, milk, onions, salt, and pepper stirring until blended. Stuff potato halves with potato mixture and top with shredded cheddar cheese and paprika. Place on parchment lined baking sheet and return to oven for 15 minutes until cheese is melted and golden brown.
