Here's one of my favorites! Not only because it's quick, but it's cheap, it's healthy (no one but me knows), and my family loves it!
Ingredients: 2 cans albacore white tuna packed in water (drained), 1 can low-fat low-sodium cream of mushroom soup, 1/2 cup non-fat milk, 2 tablespoons diced onions, 1/4 cup finely diced celery (optional), 1 cup frozen peas, 8 oz. of whole wheat pasta (any small whole wheat pasta will do), salt and pepper to taste.
Directions: Preheat oven to 350 degrees. Cook pasta according to package directions. While pasta is cooking, combine drained tuna, mushroom soup, milk, onions, celery, and frozen peas. Once pasta is done, drain and combine with tuna mixture. Turn into 8x8 casserole that has been prepared with cooking spray. Bake in 350 degree oven for 30 minutes.
Serves 4
*Note: This recipe works best if you use a small shaped pasta like a penne or rotini. If you are using a spaghetti type pasta, then be sure to break it up into smaller pieces, about 2 inches long, prior to boiling it.
