Who doesn't love sweet potatoes? I love them baked, in a pie, topped with butter and sweetened with cinnamon and sugar, made into fries... You name it, sweet potatoes are a wonderful and versatile starch. Not to mention they are good for you too.
This Sweet Potato Casserole is one of my favorite recipes not only because it's so easy to make, it's delicious, and you can modify it to your liking adding more or less butter or sugar.
This super easy way to prepare sweet potatoes is sure to become a family favorite that can be enjoyed year-round, not just during the holidays.

Ingredients: 6 medium sweet potatoes, 1/4 cup butter, 1/4 cup brown sugar, 1 teaspoon cinnamon, 1/2 cup pecans (optional), melted butter for top (optional).
Directions: Preheat the oven to 350 degrees. Prepare sweet potatoes for baking by washing, pricking with a fork several times, rub with oil or spray with non-stick spray, and wrap each individually in foil. Bake in heated oven until done, about one hour. If you squeeze them and they're soft, they're done.
Remove from oven and let cool. Peel the sweet potatoes and place in a bowl. Melt butter and put in the bowl with the sweet potatoes. Whisk cinnamon and eggs together and add to the sweet potato mixture. Then beat the sweet potato mixture and eggs with an electric mixer for about a minute. Spray a 13 x 9 pan with non-stick spray and spread the sweet potatoes in the pan. Place pecans on top (optional) and drizzle with melted butter (optional). Place pan in heated oven and bake for 30 minutes.
