I absolutely love using my crock pot. You can literally put everything in a pot, ignore it, and at the end of the day you have wonderful home cooked meal. And, this recipe calls for the crock pot. Using a crock pot is a wonderful way to have dinner ready for you when you walk in the door. It also smells wonderful when you come home too. There's no better way to have a home cooked meal prepared and ready for you when you're pressed for time than using a crock pot.
Ingredients: 10 carrots peeled and chopped or 20 baby carrots chopped, 2 stalks of celery coarsely chopped, 1 onion chopped, 4 red potatoes quartered, 2 1/2 teaspoons seasoning salt, 1 whole chicken, 3/4 cup water.
Directions: Place carrots, onions, potatoes, and 1 1/2 teaspoons seasoning salt into a crock pot. Rinse and clean the chicken inside and out discarding the neck and giblets. Put the chicken in the crock pot breast side up and sprinkle with the rest of the seasoning salt. Cook on low 7-8 hours.
To serve the chicken, you can skin and separate the chicken into pieces serving with vegetables. Use the leftovers (if there are any) for burritos, enchiladas, sandwiches,tacos, soup, quesadillas, sandwiches, chicken and dumplings, chicken pot pie, etc... the possibilities are limitless!
I like to use this recipe when I know I'm going to have a busy week. It provides an economical healthy meal and delicious leftovers that can be prepared a variety of ways as mentioned above too.
