Ingredients: 1 pound lean ground beef, 1 tablespoon olive oil, 1 onion diced, 1 teaspoon chopped garlic, 1 can diced tomatoes (drained), 1 cup shredded cheddar cheese, 4 baked potatoes.
Now, you can serve these cheesy stuffed potatoes as a fun side dish to serve along with a hearty meatloaf or as a main dish topped with your favorite steamed veggies.
Directions: Brown ground beef in oil. Add onion and garlic and cook until translucent. Add tomatoes and cook until heated through. Slice each potato down the center and squeeze as you would prepare a baked potato for toppings. Poor beef mixture over potatoes and top generously with cheese.
